As much as I love to cook, sometimes I am way too tired when I come home to do much of anything. Here is one of the dishes I make when I am feeling lazy:
Pasta
250g. whole wheat or brown rice bow-tie pasta, boiled until al dente and drained
1/2-3/4 c. cherry tomatoes, halved
1/4 c. pine nuts, lightly toasted
Chioffonade of fresh basil (8-10 large leaves)
Sea salt and freshly-ground black pepper, to taste
Olive-Sun-dried Tomato Tapenade
(makes about 1 1/2 c.)
1 c. sun-dried tomatoes, soaked for 1-2 minutes in hot water, drained, and quartered
1 c. pitted kalamata olives
1-2 large cloves garlic, peeled
1-2 tbsp. capers, drained
4 tbsp.extra virgin olive oil
1 tsp. fresh lemon juice
Sea salt, to taste
Directions
Combine all of the tapenade ingredients in a food processor and blend until well combined (texture should be like chunky peanut butter).
In the pasta pot, combine 1/2 c. of the tapenade and the remainder of the ingredients and stir until combined (the tapenade should be sticking in the corners of the bow-ties).
Serve immediately and enjoy! Makes 4 servings.
Note: If you are feeling super lazy or tired, buy a prepared tapenade and sun-dried tomato pesto and combine 1/4 c. of each in the pot when mixing all of the ingredients together.
