Not Just Another Banana Bread...

I am not sure where this recipe below comes from, but my mum's been making it since I was very little. I have successfully veganized it and even made it a bit lower in fat than the original recipe. This loaf is ideal for breakfast and is quite healthy, if you leave out the chocolate. You could also try replacing the sugar with agave nectar or fruit juice concentrate to cut down on fat and sugar. I also used a chopped up fair trade rice milk chocolate bar in this loaf since I didn't have chocolate chips.

My Mamma's Banana Bread

1 3/4 c. whole wheat flour
2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/3c. applesauce
2/3 c. cane sugar
2 c. mashed organic bananas
1 c. fair trade chocolate chips (optional)

Directions

Heat oven to 350 F. Lightly grease a loaf pan and set the pan aside.

In a medium bowl, mix together the flour, baking soda, baking powder and salt.

In a smaller bowl, combine the sugar and applesauce. Mix in the mashed banana.

Add the wet mixture to the dry mixture in thirds until the ingredients are thoroughly combined.

Stir in the chocolate chips until just combined.

Pour the mixture into the loaf pan and bake the loaf in the oven for about 1 hour to an hour and ten minutes (depending on how hot your oven is). Test doneness with a toothpick. Remove from oven and let cool 15 minutes before serving.

Makes 1 loaf (approximately 10 slices).
