Okonomi-Zushi

Never having tried hand rolls or sushi cones before at a Japanese restaurant and feeling too lazy to make maki, my boyfriend and I sat down to a fun meal of okonomi-zushi, or "sushi-as-you-like-it", last night. Hand rolls don't have to be complicated and you can stick whatever you like in them. Here is what we used:

Nori sheets (cut in half)
Sushi meshi (seasoned sushi rice)
Avocado
Inari pouches (the beancurd skins used for inari sushi)
Shitaki mushrooms
Shimauma-Tororo Konbu (a gauze-like vinegared sea vegetable)
Gari (pickled ginger)
Wasabi
Toasted sesame seeds
A Chinese vegan version of shredded pork, made from ground shitake mushrooms and nori
Soy sauce, for dipping


Put a bit of the rice and fillings you want in you roll at one end of the nori and roll everything up into a cone:

This would be even better with a bunch of friends over for a sushi party...

Thanks! You should try it - it's much easier than making rolls. You can be as messy as you like too! Next time I'll have more stuff. I'd really like to try natto out...

oh yum, i don't know why i never make hand rolls. yours look scrumptious.

and to reply to your comments on my blog...honest truth...flax seed oil? gag! i'm not even the biggest cumin fan...but follow that recipe exactly and you'll down two tablespoons of that stuff a day even if you don't fix yourself a salad to dress it with! promise! liquid gold is surely a perfect name for it.

and yes, i only have the new VV edition and that's where i got that recipe from. i'm thinking it's pretty similar to one in the uncheese cookbook if you have that one. if not, lemme know, i'd be happy to email you!

Alrighty then - I'll have to make the Liquid Gold. I know of a chili-garlic flavoured flax seed oil that I like a little better than plain flax, so maybe I'll give that a go instead.

As for the VV recipe, I may take you up on that offer. I also have a bookstore gift card, so maybe this is my excuse (not that I ever need one) to buy yet another cookbook :o)

And the hand rolls were scrumptious. They're quick to make too if you have the basic ingredients on hand.

Thanks for the compliment :o) I could eat avocado exclusively if it were okay to do that. I was always worried that it would help me pack on the pounds, but I read something the other day in the Candle Cafe Cookbook that said it isn't fattening - just a bit higher in saturated fat. Hmmm...

Mmm hmmm! Especially shitaki mushrooms. You should see if you can get a hold of Miyoko Nishimoto Schinner's "Japanese Cooking: Contemporary and Traditional". It's a great book, and it even has a vegan version of donburi.

The mushroom "pork" is really good - it adds a very interesting flavour to rice. I've never seen it anywhere before, but I haven't looked either. The things you can do with shitaki mushrooms...
