I never ate Shepherd's Pie that much growing up, but once I knew what it was I definitely liked it. Vegan versions sometimes call for ground soy, like the stuff Yves Veggie Cusine and Lightlife make. I definitely am not a fan of this stuff in vegan pie, and I was pretty happy when I came across this recipe for Gardener's Pie from Dr. Stonie Love's Bewildered Beast. It's deceivingly tasty, even when you don't have all the ingredients (I didn't have the onions). To save time, I used canned corn and beans that I mixed into the filling without sauteing them. I also used ketchup instead of tomato paste, mixed in a bit of garlic powder into the potatoes and sprinkled the top of the pie with paprika. Next time I make this recipe again, I think I'll also add some brown mushrooms.

great-looking pie! Shepard's pie is one of those foods I never had pre-vegan, but I love it now.
